Spinach Soup

This spinach soup is probably not what first comes to mind when you hear “spinach soup”. It’s not creamed or blended – it’s broth-based. But it’s what I thought of as spinach soup when I was growing up. I loved it whenever my mom made it. So when I got old enough to start paying attention to how my favorite foods were cooked, I was delighted to discover how simple it was to make this wonderful spinach soup.

Guessipe

  • 2 cups chicken broth
  • a few handfuls fresh spinach
  • egg

Bring a nice tasty chicken broth to a boil. Drop in spinach and stir. Crack a whole egg into the broth, then gently scoop spinach over the top of the egg to push it into the hot broth (this will cook the egg but leave the yolk runny so that when you break open the egg you get some great yolk texture and flavor in the broth). Remove from heat and serve.

I know it sounds absurdly simple, but the combination really is delicious. And it’s awesome to throw together super fast with almost no effort.
