One day my aunt was complaining about how my uncle would always buy bananas with the idea of having peanut butter and banana sandwiches, but never actually get around to making them before the bananas went bad. A couple days later I was looking at a bunch of overripe bananas on my counter… and got inspired to make a peanut butter banana cake. It turned out to be such a treat I immediately made another one to share with my aunt and uncle!
Guessipe
- 1 1/2 cups flour
- 3/4 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1 1/2 tsp cinnamon
- 1/4 tsp cardamom
- 1/2 cup buttermilk
- 6 TBSP butter, melted
- 1/2 cup brown sugar
- 1/3 cup sugar
- 2 eggs
- 3 TBSP vegetable oil
- 1 1/2 tsp vanilla
- 3 bananas, mashed
- 1/2 cup creamy peanut butter
FROSTING
- 1/4 cup sugar
- 1/4 tsp salt
- 1/3 cup Greek yogurt
- 1/2 cup peanut butter powder
Whisk together the flour, baking soda, baking powder, salt, cinnamon, and cardamom. Set aside.

In a large bowl – whisk the buttermilk, melted butter, brown sugar, and sugar together in a large bowl.

Whisk in the eggs, vegetable oil, and vanilla.

Add the mashed bananas and peanut butter. Whisk until well combined.

Fold the dry mixture into the wet mixture until just combined. Pour into a parchment-lined 8×8 baking pan. Bake at 350 degrees F until a toothpick comes out clean (about 50 minutes). Allow to cool completely.

For the Frosting – whisk the sugar, salt, and yogurt together until the sugar is completely dissolved, then whisk in the peanut butter powder.

Spread the Frosting on the cooled cake.
