Mango Lassi Pie

What would be in the running for my favorite holiday? Well, Pi(e) Day, of course. March 14, aka 3.14, get it? I had convinced a bunch of friends to help me celebrate this mathe-magical day. Even though it fell on a Tuesday, they had all agreed to make homemade pies (go here to feast your eyes on all the pies we had). Having successfully talked them into this weeknight endeavor, I now had to figure out my pie (yay stupid math puns!).

I decided to wander through the grocery store for inspiration, and came upon some cases of lovely ripe mangoes. I wondered why I’d never had a mango pie. I started to think of how much I liked mangoes – fresh, pudding, as a salad, mango lassi. That was it! Mango lassi is one of my favorite drinks (go here for my Guessipe), and I was going to make a pie inspired by the flavors of a mango lassi.

Guessipe

  • 1 pie crust
Mango filling
  • 4 mangoes, chopped (reserve 10 thin slices for decorative topping)
  • 1/4 cup honey
Yogurt layer
  • 1 cup yogurt
  • 1/2 cup honey
  • 3 TBSP flour
  • 1 egg
  • 1 tsp vanilla
  • 1 tsp rose water (optional)
  • 1 tsp cardamom
  • 1/4 tsp salt

As much as I love pie, I have to admit pie crusts intimidate me. Mastering the pie crust is on my list. For now, I say go right ahead and buy a pre-made crust. Or find a friend who is a professional chef and get her to make one for you – that’s what I did (thanks Alyssa!). Blind bake the crust at 375 degrees F for 10 minutes.

Put the chopped mangoes into the partially baked crust, pour the honey on them, mix it around and press the mango layer down.

Put all the Yogurt Layer ingredients into a bowl and mix well. Use rose water if you have it (or borrow some from a friend like I did – thanks again Alyssa!), but don’t fret if you don’t. Rose water adds some nice fragrance, but you can have a perfectly lovely pie without it. The frugal (ok, cheapskate) in me hates buying an ingredient which I will use only one tiny spoonful of in one recipe.

Pour the yogurt mixture over the mango layer.

Place your 10 mango slices to make a pretty flower decoration for your pie. Or don’t. This is purely for presentation. I enjoy this sort of thing, but your pie will taste perfectly good without it.

Bake at 375 degrees F for 40 minutes. I think this pie is much better chilled, so if you can manage the wait, chill in the fridge for a couple hours.
