Mango Cake

I got a box of huge, perfectly ripe mangoes, and after gobbling a bunch down and using a couple to make mango lassi, I still had one left. While I’m on Team Pie, I had some friends coming over who are on Team Cake (there’s just no accounting for taste). So I decided to use the last mango to make a Mango Cake. I’m still not converted from my pie obsession, but… I have to admit it was pretty tasty.

Guessipe

  • 1 cup sugar
  • 2 eggs
  • 1 tsp vanilla
  • 1/2 cup vegetable oil
  • 1 1/2 cups flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 3 TBSP water
  • 1 large mango, peeled and sliced

Beat sugar, eggs, and vanilla in a stand mixer until fluffy.

Beat in vegetable oil.

In a separate bowl, whisk together flour, baking powder, and salt.

Beat half of the dry mixture into the wet mixture. Then beat in the water and remaining dry mixture just until combined.

Spread half of the batter into a 9-inch parchment-lined springform pan. Add a layer of mango slices. Cover with the remaining batter. Bake at 350 degrees F for 1 hour.

Allow to cool. Remove from springform pan and top with additional mango slices.
