Japanese Egg Salad Sandwich (Tamago Sando)

Before I went to Japan, people kept telling me I would love the 7-Eleven food there. I was skeptical to say the least. I have never eaten anything from 7-Eleven in the US, and with all the incredible food spots I had lined up for my trip, I just couldn’t imagine why I would want to waste the time and stomach space on convenience store food. What I didn’t understand (and to this day it still tickles me) is that in Japan convenience stores don’t just carry crappy packaged foods with enough preservatives to allow them to sit on the shelf for who-knows how long; they sell real food (at great prices) like fried chicken, onigiri, bento, and a variety of sandwiches including the very popular egg salad sandwich Tamago Sando. I ended up going to 7-Eleven at least once a day during my time in Japan. When I got back I found myself missing their food, so I created my own fancied-up version of Tamago Sando.

Guessipe

  • 6 hard-boiled eggs, peeled and coarsely chopped
  • 4 oz water chestnuts, minced
  • 4 roasted garlic cloves
  • 1 Thai chili, minced
  • 3 TBSP green onion, minced
  • 1/4 cup kewpie mayonnaise
  • 1 tsp sugar
  • 1 tsp salt
  • 1 tsp rice vinegar
  • 1/4 tsp pepper
  • 1 medium-boiled egg, peeled and sliced in half
  • 4 slices of Japanese milk bread or white bread

Use a fork to mash up the hard-boiled eggs. Add the water chestnuts, roasted garlic, Thai chili, green onion, kewpie mayo, sugar, salt, rice vinegar, and pepper. Mix until well combined.

Place a half of the medium-boiled egg yolk-side down in the middle of a slice of bread. Spread the egg salad over the bread around the medium-boiled egg.

Top with another slice of bread. Slice the sandwich in half so that it bi-sects the medium-boiled egg.
