Guava Cheese Pastries

My favorite Cuban bakery and my favorite Taiwanese bakery both have Guava Cheese Pastries. They are delicious, and similar enough that it got me thinking I could probably make them at home using my guava jam and the amazing ricotta from my cheese hookup. Guava Cheese Pastries are typically made with cream cheese, but I’ve found if you have high quality ricotta it works just as well. I use whichever I have on hand.

Guessipe

  • 1 puff pastry sheet, thawed according to package instructions
  • guava jam
  • ricotta or cream cheese
  • 1 egg, beaten
  • sugar for sprinkling

Roll out the puff pastry a bit so that it’s smooth. Cut into 6 rectangles.

Arrange the pastry rectangles on a parchment-lined baking sheet. Spread guava jam onto one half of each rectangle, leaving a border around the edges. Top with cheese.

Brush the edges of each pastry with egg wash, then fold the pastry over the guava and cheese and press to seal. Brush the tops with egg wash.

Sprinkle with sugar and cut 3 slits into the top of each pastry.

Bake at 400 degrees F for 22 minutes.
