Banchan – Sesame Bok Choy

Continuing my Banchan series… this dish is more commonly made with spinach (which is good too), but I like the extra crunch of Sesame Bok Choy. The combination of sesame oil and sesame seeds really brings out the sesame flavor I love.

Guessipe

  • 8 baby boy choy, separated into individual leaves

marinade

  • 3 green onions, chopped
  • 3 cloves garlic, minced
  • 1 TBSP sesame seeds
  • 4 tsp soy sauce
  • 4 tsp sesame oil
  • 1/2 tsp salt

Drop the bok choy in a pot of boiling water, stir for 30 seconds, pour into a colander, and rinse with cold water. Squeeze out the water and cut the bok choy into bite size pieces. Combine the bok choy and all marinade ingredients.

Toss until well coated. Refrigerate and serve cold. You can do the exact same things to make a spinach version.
