Sausage Strata

We were going to a baseball game and staying overnight with family who live near the stadium. I’d recently somehow managed to accumulate several loaves of bread and was looking for ways to use them. It occurred to me that a strata would be perfect – I could make it before the game, leave it in the fridge overnight at my family’s house, then pop it in the oven in the morning so we could all have a nice brunch together. My husband loved the Sausage Strata so much that I was easily able to use up all that bread making it several more times!

Guessipe

  • 1 lb italian sausage
  • 1 red onion, chopped
  • 7 slices bread, cut into cubes
  • 1 cup gouda, shredded
  • 8 eggs
  • 1/2 cup Greek yogurt
  • 1 1/2 cups milk
  • 1 tsp garlic salt
  • 1 tsp oregano
  • 1/2 tsp paprika
  • 1/2 tsp ground mustard
  • salt and pepper to taste

Remove the sausage from its casing and saute over medium heat until brown. Transfer to a greased 9×13 baking dish.

Saute the onion in the remaining sausage grease until it begins to turn translucent. Transfer to the baking dish.

Add the bread and gouda to the baking dish and toss all ingredients together.

In a bowl, beat together the eggs, yogurt, milk, garlic salt, oregano, paprika, ground mustard, salt, and pepper. Pour over the sausage mixture and toss until all the bread pieces are coated. Cover with aluminum foil and refrigerate overnight.

With the aluminum foil still on, bake at 350 degrees F for 45 minutes. Uncover, reduce temperature to 325 degrees F, and bake for 30 more minutes.
