Lemon Za’atar Cauliflower

One night I threw this Lemon Za’atar Cauliflower together using what I happened to have around. My husband lost his mind for it, saying he would choose this cauliflower dish over roasted pork (and he LOVES roasted pork). So I’ll definitely be making it regularly, especially since it’s also healthy and easy. I used green cauliflower here, but any kind of cauliflower works.

Guessipe

  • 1 head cauliflower, cut into florets
  • 3 cloves garlic, thinly sliced
  • 1/4 cup olive oil
  • salt and pepper to taste
  • 1/2 cup cilantro, chopped
  • 1 TBSP za’atar
  • 2 TBSP lemon juice

Toss the cauliflower and garlic in the olive oil, salt, and pepper until well coated. Spread on a lined baking sheet. Bake at 425 degrees F until tender and beginning to brown at the edges (about 20 minutes).

Transfer from the baking sheet to a bowl and toss with the cilantro, za’atar, and lemon juice.
