Braised Belgian Endives

For August’s Cookbook Club, we decided to do a blog instead of a cookbook. But not just a blog by some random stranger on the internet – we did BelgianFoodie.com, the blog of one of our very own Cookbook Club members… Brad! I made the Braised Belgian Endives. You can check out the other Belgian Foodie dishes we tried out on my Cookbook Club site. For now – my dish!

Since it’s a Belgian Foodie blog, I figured I ought to try a Belgian dish. I’ve never cooked endives before and I’m always up for something new, so I went with the Braised Belgian Endives.

I cut the Belgian endives in half lengthwise, then sautéed them for 5 minutes in olive oil with salt and pepper, turning them occasionally.

Then I added nutmeg, garlic, and sugar, cooked another minute, and turned them over again.

I added a little water and continued to cook them until tender, turning them every once in awhile. The recipe said to cook for another 10 to 15 minutes, but I only did another 5 minutes as I don’t like my veggies mushy.

They seemed plenty tender to me, and I think they would have been way over-cooked if I had followed the recipe. I thought these Belgian endives were a decent basic dish, though nothing particularly stood out about them. I’ll keep looking for other ways to make endives.
